At Norfish, we begin by sourcing the highest quality, premium grade salmon using only fresh and sustainably harvested salmon from suppliers that meet our intensive testing and verification process. Each salmon is individually inspected and hand-salted using only kosher salt. Our master smoker follows the traditions of our ancestors and family to delicately smoke the salmon, achieving the perfect balance of salmon and smoke. All of our processing activities are produced according to HACCP federal regulations.
This type of smoking produces a moister and more delicately flavoured fish. It is considered uncooked as it has never exceeded 90F during the smoking process.
